
Caramelized Onion, Arugula & Herbed Mayo Grilled Cheese Recipe
Your favorite comfort food just got even better! Fresh sourdough bread, loaded with sweet, caramelized onions, a delicious, herbed mayo, fresh arugula and that decedent melty gruyere cheese and toasted to perfection in a hot skillet!
Seriously consider making extra! These are so good!
Prep time: 5 minutes | Cook time: 15 minutes | Yields 1 Sandwich
Ingredients
3 T. mayonnaise
1 t. fresh parsley, chopped
1/4 t. dried oregano
2 slices sourdough bread
1 T. softened butter
2 T. caramelized onions, store bought or homemade
2 slices gruyere cheese
1/2 c. arugula leaves, roughly chopped (or baby arugula)
2 slices gouda cheese
1 c. cherry tomatoes, to serve
Directions
1.   In a small bowl, combine the mayonnaise, parsley, and dried oregano.
2.   Butter the outside of the slices of sourdough bread.
3.   Assemble the sandwich by layering the herbed mayo, caramelized onions, gruyere, arugula, and gouda between the non-buttered sides of the bread.
4.   Place the sandwich buttered side down on a non-stick frying pan and place over medium-low heat. Cook until golden-brown and crispy on both sides, approximately 6-7 minutes per side.
5.   Serve alongside cherry tomatoes or a simple salad.
