Yes, that’s how I feel when I see snack recipes to take along on a hike up the mountains.


So, I quickly make the recipe and some plans, which then fizzle out because … well, I don’t hike. Walks around a tree lined track excluded, that is.


Life goals!


On the ‘plus side’ – this Pecan Energy Bars Recipe makes a really tasty snack.


Ingredients


8.9 oz. (250g) medjool dates, pitted

4 oz. (115g) pecans, halves

1.6 oz. (45g) rolled oats

1 tbsp. chia seeds

1 tsp. vanilla extract

½ tsp. ground cinnamon

¼ tsp. salt


Directions


  1. Preheat the oven to 200°F (90°C). Line a baking sheet with baking paper.

  2. Place the dates in a food processor and pulse until chopped and a rough texture forms. Add the remaining ingredients and process for a minute, to form a crumbly dough.

  3. Place the dough onto the baking sheet and roll out into a 6x10.5” (15x25cm) rectangle and cut the dough into 12 even-sized bars.

  4. Bake the bars in the hot oven for 30 minutes, just to dry them out a little. Then remove from the oven and set on a wire rack to cook to room temperature before enjoying.

  5. Store the bars in an airtight container, in the refrigerator, for up to 1 month.
