Sweet and Creamy Indian Carrot Pudding Recipe


This sweet and creamy version of Indian Carrot Pudding uses the same traditional recipe but incorporates more sugar and milk. It's a great alternative to regular carrot pudding for those with a sweet tooth and the additional milk gives it a slightly creamier texture.


Ingredients


½ kg (1 lb) carrots, grated

1 liter (4 1/4 cups) full fat milk

150 gm. (3/4 cup) sugar

½ cup dry fruits (almonds, cashews)

2-3 cardamom

2 tbsp. unsalted butter (ghee) (optional)


Directions


1.       Heat milk in a thick bottom pan. Allow it to boil.

2.       Add grated carrots and cardamom.

3.       Cook on a slow flame, stirring slowly. When milk had dried down, add the dry fruits and sugar.

4.       Stir slowly on low heat, until all milk has dried up.

5.       Add unsalted butter (ghee) to avoid the pudding sticking to the pan.

6.       Turn off the heat. Serve warm.
