
Syrniki - Ukrainian Sweet Ricotta Pancake Recipe
Syrniki are light cheesy Ukrainian pancakes. They are simple and satisfying, both sweet and savory at the same time. A fruit topped bite of delight.
Prep time: 10 minutes / Cook time: 15 minutes / Serves: 2
Ingredients
1 large egg
1 c. ricotta cheese
1 T. olive oil
1 t. pure vanilla extract
1/4 c. all-purpose flour
2 T. sugar
1/4 t. salt
2-3 T. honey, for serving
Sour cream, for serving
Fresh berries or fruit of choice, for serving
Directions
1.   In a large mixing bowl, whisk together the egg, ricotta, vegetable oil, and vanilla. The mixture will look curdled and that is normal and what it should look like.
2.   Gently fold in the flour, sugar, and salt until a thick mixture forms. Allow to sit for 5 minutes.
3.   In the meantime, preheat a non-stick skillet over medium-high heat. Lightly brush with vegetable oil.
4.   Divide the pancake mixture into 6 equal pieces and, using your hands, form round-shaped pancakes.
5.   Cook the pancakes in batches of 3, until deeply golden-brown on both sides, approximately 3-4 minutes per side.
6.   Serve topped with a dollop of sour cream, fresh fruit, and a drizzle of honey.
